    The blog says last year. Actually, it was two years ago. Time flies!

    It was taken in Bergen, Norway. It is the shop window of an everyday fishmongers. On one side, the usual array of fish. On the otherside, this. A huge pile of dried cod. According to Floyd’s Fijord Fiesta programmes, they are dried on wooden racks. One assumes this is for preservation. For cooking, they are reconstituted in liquid. As far as I can tell, no salt is used.

    I travelled with Hurtigruten (the coastal ferry) all the way from Tromso to the Russian border and back to Bergen and I don’t recall seeing these racks anywhere along the way. I have gone back and re-examined the 1000+ images of that journey and still can’t see any. Still, they must exist somewhere.
